How to preserve the nutritional value of vegetables

Vegetables are plant foods that represent an important source of nutrients, especially sugars, mineral salts and vitamins. Vegetables do not contain as much protein, which is mainly found in vegetables such as beans, peas or soybeans and in cereals. Fats are found in sunflower seeds, soybeans, corn, and other similar vegetables.

Therefore, it is obvious that we must pay close attention to vegetables and these should represent half of the meals we eat every day, since they are the main source of mineral salts and vitamins that the human body needs to carry out its vital functions. In this way, we have a balance between these foods and those that come from animals, which have higher biological and energy values.

You should consume fresh vegetables as much as possible because they lose part of their vitamins and mineral salts if they are cooked. If you want to cook vegetables, you must use the same methods as for meat and some vegetables can be cooked in more than one way.

For example, if you cut the lettuce with a knife, the leaves will rust and lose their qualities, so it is better to remove the leaves one by one. Also, you should boil or bake them, but you should not opt ​​for fried vegetables. You can even steam them instead of boiling them. In this way, you preserve all the vitamins that you lose if you cook them differently.

Last but not least, if you want to keep not only the properties, but also the taste of these foods, you should put the vegetables in water when the water is boiling. If you add them from the beginning, the stew will take on more flavor and will absorb some of the nutrients in those vegetables. So be careful how you cook your veggies because you might lose some precious substances in there.
