maintenance tips
Here are some simple tips that will help extend the life of this equipment:
• Never use high heat on the pan when it is empty. Repeated use of high heat will compromise the heating surface or cause it to warp.
• New tilting pans should be seasoned with oil before normal use. The bottom of the pan should be coated with oil and heated in intervals of a few minutes, as this will help prevent sticking problems and make cleanup easier.
• Food residues should be cleaned from the bottom of the pan by heating water with residual heat.
• Cleaning can be done effectively with a nylon brush and warm soapy water. At no time should strong cleaners or harsh materials be used as this can damage the pan.
• During cleaning, care must be taken to ensure that water is not sprayed onto the mechanical components of the equipment.
• It is best to use properly shaped utensils that go with the pan to prevent them from digging into the pan.

The tilting pan is a very important piece of equipment in any commercial kitchen and should be given the proper care and consideration that it deserves.
